Step-by-step cooking method Mix the flour and yeast in a bowl. Add the egg and the rest of the ingredients to the bowl. Stir well to create a dough. Knead with your hands and make a ball with the dough. Leave the ball of dough to prove for 30 minutes in the bowl covered with cling film. Knead again and make a new ball with the dough. Divide the ball of dough into 4 and make a ball with each part. Leave the 4 balls to prove for 1 hour covered with cling film. Roll each ball of dough into a rectangle shape. Add a little butter to the dough and roll with a rolling pin until it becomes very thin. Pick up the dough and gradually roll into a long sausage shape and leave to prove for 1 hour. Roll it, shaping the ensaimadas and leaving space for the dough to expand. Leave to prove for 3 hours. Bake the ensaimadas in the fryer. Leave to cool and decorate with icing sugar to serve.
