Ingredients

  • 225 g of strong flour
  • 90 ml water
  • 50 g sugar
  • 5 g yeast
  • 40 g butter
  • 1 egg
  • Icing sugar to decorate

Step-by-step cooking method

  1. Mix the flour and yeast in a bowl.
  2. Add the egg and the rest of the ingredients to the bowl. Stir well to create a dough.
  3. Knead with your hands and make a ball with the dough.
  4. Leave the ball of dough to prove for 30 minutes in the bowl covered with cling film.
  5. Knead again and make a new ball with the dough.
  6. Divide the ball of dough into 4 and make a ball with each part.
  7. Leave the 4 balls to prove for 1 hour covered with cling film.
  8. Roll each ball of dough into a rectangle shape. Add a little butter to the dough and roll with a rolling pin until it becomes very thin.
  9. Pick up the dough and gradually roll into a long sausage shape and leave to prove for 1 hour.
  10. Roll it, shaping the ensaimadas and leaving space for the dough to expand. Leave to prove for 3 hours.
  11. Bake the ensaimadas in the fryer.
  12. Leave to cool and decorate with icing sugar to serve.
