  • 280 g wheat flour
  • 150 g butter
  • 125 g icing sugar
  • 50 g grated coconut
  • ½ teaspoon salt
  • ½ teaspoon bicarbonate of soda
  • Vanilla extract
  • 1 egg

Step-by-step cooking method

  1. Sieve the flour to remove the lumps.
  2. In a bowl, mix the butter and sugar. Mix well.
  3. Add the flour, coconut, bicarbonate of soda and salt. Stir the mixture thoroughly.
  4. Add the egg and vanilla. Stir again.
  5. Cover the mixture with film and leave in the fridge for 1 hour.
  6. Roll the dough on the kitchen worktop and make biscuits with a cutter.
  7. Bake the biscuits in the fryer.
  8. To serve, sprinkle icing sugar on the biscuits.
