  • 1 aubergine
  • 1 tomato
  • 1 red onion
  • 1 clove garlic, chopped
  • 1 tablespoon grated cheese
  • 4 tablespoons olive oil
  • 2 teaspoons dried oregano, chopped
  • 1 teaspoon mustard

Step-by-step cooking method

  1. Peel and slice the aubergine and cut the onion into rings.
  2. In a bowl, mix together the aubergine, onion, garlic, oil, mustard and oregano.
  3. Roast in the fryer for 15 minutes and stir halfway through cooking.
  4. Add the sliced tomato, sprinkle grated cheese on top and continue roasting until the cheese melts.
  5. Leave to rest for 10 minutes before serving.
