  • 1 cod loin, salted to taste
  • 1 onion
  • 60 g Brie cheese
  • 1 sheet of all-butter puff pastry
  • Olive oil
  • 1 teaspoon sesame seeds
  • Ground black pepper
  • Salt

Step-by-step cooking method

  1. Cut the cod loin into 4 portions.
  2. Finely chop the onion and fry in a frying pan with a drizzle of oil and a pinch of salt until they brown.
  3. Roll out a little of the puff pastry with a rolling pin on a sheet of grease-proof paper.
  4. Cut the sheet of pastry into 4 equal pieces.
  5. Place a portion of cod on each piece of puff pastry and place a little Brie cheese on top with a tablespoon of the fried onion.
  6. Wrap the cod loins in the sheets of pastry, closing them fully on each side and cutting off the excess pastry. Make superficial cuts on the top.
  7. Brush the pouches of puff pastry with oil and add a touch of ground black pepper and some sesame seeds on top.
  8. Bake the 4 cod puff pastry pies in the fryer on top of grease proof paper.
