150 g de pan del día anterior en miguitas o daditos
50 g de harina de garbanzos
25 g de coco rallado
1 cucharadita de ajo molido
1 cucharadita de perejil
Aceite de oliva
Sal
Elaboración paso a paso
Pela y lava bien la berenjena, luego córtala en dados pequeños.
Echa los dados de berenjena en una sartén, añade un chorrito de aceite de oliva y un poquito de sal, tapa y deja que se rehogue a fuego alegre, removiendo de vez en cuando.
Cuando la berenjena esté hecha, colócala en un bol y déjala templar.
Añade al bol los demás ingredientes y mezcla bien con las manos hasta obtener una masa compacta.
Dale forma de croqueta a cada porción de masa.
Rocía las croquetas con aceite de oliva y cocina en la freidora.
