Ingredients

  • 250 g cooked chickpeas
  • 1 medium onion
  • 2 cloves garlic
  • ½ cm ginger rhizomes
  • 3 tablespoons parsley
  • ½ teaspoon turmeric
  • 1 heaped teaspoon coriander
  • 1 heaped teaspoon cumin
  • 1 teaspoon sea salt
  • Ground pepper
  • 1 pinch nutmeg
  • 1 pinch cinnamon
  • 1 teaspoon baking powder
  • 2 teaspoons olive oil

Step-by-step cooking method

  1. Place the chickpeas in a colander, rinse with cold water and leave them to drain.
  2. Dice the onion into small cubes. Finely chop the garlic and ginger and mix with the parsley and chickpeas. Grind everything in a blender.
  3. Add the spices and baking powder and grind again.
  4. Using damp hands, shape 10 falafels.
  5. Brush the tray with a little olive oil and place the 10 falafels on it.
  6. Bake in the fryer for 12 minutes.
  7. Place oil in a small bowl and moisten the falafels in the oil with the help of kitchen tongs.
  8. Leave to cool before serving.
